The evaporator sends the heat out into the atmosphere, while the refrigerant is subsequently sent to a condenser where it is turned back into a liquid and then compressed, moving back to the heat source. This allows large pieces of machinery and components that need to be kept at a low temperature to have their heat easily regulated. It can also be used in such purposes as creating cool, pleasant drinking water. The heat coming off the chillers can be used to create hot water as well, in cooler environments where natural water actually needs to be warmed.
